It's a classical MIDI command called "All Notes Off". If you send it all hanging notes will immediately stop. So what are "hanging notes" then? Playing MIDI works by sending out a MIDI Note On message when a note shall be started and a MIDI Note Off message when the same note shall stop. If something happens before the Note Off event is sent the sound device will just keep on burping that not until the restaurant at the end of the universe closes down.

I'd be also happy about this.
When I found out how to change the order of plugins in a channel (pressing alt key or something), it was pure revelation... :-)

Not sure that is possible in the Edit Window (if that is what you are asking for?). But you can create nice looking faders or stream meters in the Layout Window that you can move, scale and resize just as you like it. These objects are then used in Performance Mode (cmd-3) and Full Screen Mode (cmd-4)
