That should work fine by;
Pressing down = MIDI CC#64 value 127
Releasing = MIDI CC#64 value 0

The trick in simulating piano sustain with synth sounds is how you program the synth sound, ie the setting of the hold and decay parameters. I made a bunch of such patches for an all synth looping set-up I play with an EWI.
