I find Parallels Access intriguing, but you'd still need your computer:

Yeah, that's the "long" answer ... you CAN control it, but it doesn't actually run it as an application on the iPad.

But if you're using a headless system like a Mac Mini, you can use your iPad as a monitor/interactive interface for things like this ...
