You can use any class compliant USB MIDI interface with iPad but you will need the Apple camera connection kit (CCK) to give you a USB connection from the iPad and you need the older CCK with the 30 pin connector since you have iPad 1. You can probably find that online or ebay cheaply. 
I use an M Audio Uno USB cable but I've heard the cheap USB midi cables  from Amazon work too.  I'm not familiar with the Touch Osc app but it should see your USB midi connection. 
If you haven't already done this and if you still can I would update your iPad to the newest OS version.

But if I can get my iPad talking via a cable (using a dock or something,) then surely then I can just enter normal midi commands, instead of using OSC?
Right?

I realise Im rambling so I summarise.

1, Can I get midi out of an iPad1
2, Can I use midi commands in my TouchOSC set up,instead of OSC then?

Oh and before anyone asks.. NO THERE IS NO /NEVER... ANY COMPUTER IN MY SET-UP!
Im a HARD hard-ware guy!
