I just got some din connectors to make my first midi cables this past week. I haven't made them yet but it doesn't seem much different than making audio cables. You don't have to use rosin flux but that's helped me make a solid joint when making audio cables. The connectors you have picked out look fine. I wonder what the guy used to cover up the shield connected to pin 2 in the picture in your suite101 link. Look like a convenient way to prevent the shield from touching anything else.
