Eight stereo loops at most. The reason for that I like the sound of
multiple loops when the loops are of different lengths and also get
rate/speed shifted in real-time to instantly create new poly rhythms
and sound shape colors.

Having said this, I want to repeat here what I said in my LInearity
Thread post: It's really slow to work many loops in a performance, so
it kind of fits better with music that is complex in sound but not in
the scoring/compositional department.

What I often do, when using five to eight simultaneous loops is to
overdub/substitute into many of them at the same time (having them set
up to loop back that audio differently, as described above).
