Ah!,  Lets say you use a fader box to control volume of 8 output channels. 
Rather than have each output channel respond to a different midi channel,
using CC 7 to control their volumes,   you could use 1 midi channel and use
a diffent CC# to control volume for each channel?

the quick answer, no.. 

there are 127 different CC's per channel... assuming the thing you are
controlling allows for you to change which CC each control responds to, it
will
be a long time before you run out of MIDI commands...
